Simply seasoned with salt and pepper, this salad is very easy to make!

Ingredients:

  • 1 serving, multiply as needed.
  • 4 to 5 cups of mixed salad
  • 1/2 beetroot, grated
  • 1 shallot, thinly sliced
  • 1 small handful of thinly sliced red cabbage
  • 1/3 cup fresh sprouts (I used fenugreek, but others are fine too).
  • 1 tablespoon of cold pressed linseed oil
  • 2 teaspoons of apple cider vinegar
  • 1 and 1/2 teaspoons of pure maple syrup
  • salt and pepper to taste
  • Tempeh marinated and seared / baked or tofu.

Preparation:

Combine the vegetables in a large bowl and add the linseed oil, vinegar, and maple syrup. Season with salt and pepper, mix and taste / adjust seasoning as needed. Top with seared or baked tempeh or tofu, if desired, and enjoy immediately.
