Ingredients:

  • 4 slices of wholemeal bread (even with seeds if you like)
  • ½ cup alfalfa sprouts
  • goat cheese with herbs
  • 2 lettuce leaves
  • 1/2 of a large cucumber, peeled and sliced
  • 1 large avocado, peeled and sliced
  • Splash of fresh lemon juice
  • Salt and black pepper, to taste

Procedure:

  1. Distribute the herb goat cheese evenly over all slices of bread. Take one of the slices and put the lettuce, cucumber slices and avocado slices in it. Squeeze some fresh lemon juice over the cucumbers and avocado. Add the sprouts and season with salt and black pepper, to taste.
  2. Close the sandwich with a slice of bread spread with goat cheese on the underside. Repeat with the second sandwich. Et voila! Enjoy it!

Note: If you don’t have goat’s cheese with herbs, you can use the regular one or add herbs to your liking.
