Ingredients for two:
- 1 and 1/2 cup cooked pearl barley
- 1 cup of alfalfa sprouts
- goat cheese to taste
- 1/4 cup of sunflower seeds
- 1/4 teaspoon salt
- a pinch of red pepper flakes (* optional, if you like spicy)
- 1 ripe avocado, peeled, pitted and sliced
- 1/2 cup of plain yogurt
- 1 teaspoon of lemon zest
- 1 teaspoon of lemon juice
- 1/4 teaspoon of black pepper
Procedure:
In a large bowl, mix together the cooked barley, sprouts, goat cheese, sunflower seeds, salt, and chilli. Divide into two bowls and add the avocado. In a separate bowl, whisk together the yogurt, lemon zest, fruit juice, and black pepper. Decorate the barley bowl with a nice drizzle of yogurt sauce and serve.

* I’ve made this bowl three times. Once with pearl barley, once with millet, and once with spelled. All three were equally delicious.
